Pasta Alla Vodka with Oregano Breadcrumbs

Pasta alla Vodka with Oregano Breadcrumbs. A classic Italian Sunday dinner. Simple, easy, delicious. The herby breadcrumbs add the perfect touch to the creamy vodka sauce that is truthfully impossible not to love !! Happy Sunday from us and our comforting feel-good dinner !!

Honestly, the only thing I really wanted today was an Italian Sunday comfort meal. Last night I was out in the city, and I couldn’t wait to come home and have a good pasta dish for Sunday dinner. Being a bit tired from last night, I was not really up for cooking, taking tons of pictures, or updating the blog.

Vodka sauce is a super easy, delicious dish that solved that problem for me. I mean who doesn’t love a good vodka sauce?! And this one is super fun because there’s herby breadcrumbs on top which gives the dish an extra spark that sometimes vodka sauce needs. Because after all it is a pretty simple dish, but honestly that’s what makes it so good.

Creamy sauce, thick-cut pasta, toasty oregano breadcrumbs? Oh yes, this pasta can pretty much solve all your problems in minutes. It is just too good !! This is one relaxing Sunday for me before it’s time get back into another long week of work !!


Ingredients:

  • 1/4 cup butter

  • 2/3 cup vodka

  • 1 pint homemade or store-bought marinara sauce

  • 1/2 pint heavy cream

  • Salt and pepper

  • 1 pound pasta

For the Breadcrumbs

  • 2 - 3 slices thick-cut Tuscan bread

  • 1 1/2 tablespoon olive oil

  • 1 tablespoon fresh oregano

  • salt pepper

Directions

  1. In a medium skillet, melt the butter over medium heat. Pour in the vodka, increase the heat to high. Ignite the vodka to burn off the alcohol.

  2. When the flames die down, add the marinara sauce and cook for 3 minutes. Add the heavy cream, salt, and pepper. Simmer for another 5 - 8 minutes. Set aside

  3. In the bowl of a food processor, process the bread until crumbly. Meanwhile, heat the olive oil in a medium skillet. When oil is hot add the oregano. Sauté for 1 minute. Add the breadcrumbs, salt, and pepper. Sauté until toasty.

  4. Cook the pasta and drain. Add the pasta to skillet with the vodka sauce, tossing to combine. Serve topped with breadcrumbs.
