It’s the middle of January and it’s cold. And I have been saying this all week, but hearty, cozy, warm your bones dishes are everything that we need. The cold temps have really not been doing it for me, so here’s to another night of comfy, cozy food.
There is seriously nothing not to love about a pasta bake. They’re always creamy, always cheesy, and always decadent. And sometimes that’s exactly what you need to cheer you up when it’s cold and dark and work is stressing you out.
This pasta bake is SO delicious. Think French onion soup, but in pasta form. Creamy, cheesy, delicious goodness all around. There’s the sweet caramelized onions, the herby mushrooms, and well….LOADS of cheese. Pretty much all you could ask for in a pasta bake.

Ingredients
4 tablespoons butter
2 sweet onions; thinly sliced
1 teaspoon honey
1 1/4 cups red wine
1 garlic clove; minced
12 ounces wild mushrooms; sliced
2 tablespoons thyme leaves
salt and pepper
4 cups chicken broth
1 tablespoon Worcestershire
2 bay leaves
1 pound short-cut pasta
1/4 teaspoon cayenne
1 1/2 cups heavy cream
2 cups shredded gruyere
Directions
Preheat the oven to 400 degrees.
In a large pot, melt the butter. Add the honey and the onions. Cook stirring occasionally for 10 minutes. Slowly add 3/4 cup of wine, a little at a time, until the wine cooks into the onions. About 20 minutes for the onions to caramelize. Once onions are deeply caramelized, add the garlic, mushrooms, and thyme. Season with salt and pepper. Cook another 5 - 7 minutes.
Add the remaining 1/2 cup of wine, chicken broth, Worcestershire, bay leaves, and pasta. Bring to a boil and stir frequently until the pasta is cooked al dente and broth has absorbed. About 10 - 12 minutes. Stir in the cayenne, cream, and a 1/2 cup of gruyere cheese. Remove from heat.
Transfer the pasta to a baking dish and top with the remaining gruyere. Transfer the baking dish to the oven and bake for about 20 minutes or until cheese has melted.
