Creamy Mussels with Pasta. Sunday’s are always all about pasta, but in the summer you need to give it that fun seafood twist. So today we’re making a pasta with a creamy mussels sauce. The sauce is super decadent and the mussels make it fancy so it’s perfect for weekend entertaining. Topped with fresh parsley and red pepper flakes. Served with a glass of white wine. Perfect for summer sunday scaries !!
Sunday scaries are definitely hitting hard today, especially since summer weekends are flying and we only have about three left. But in honor of summer Sunday’s we have to do our Sunday pasta up with a seafood twist. Because Sunday’s are for pasta and wine, but summer Sunday’s are for seafood pasta and wine.
This one is a creamy mussels sauce, and it is actually pretty simple to make. Creamy, rich, decadent, and fancy all in one big old bowl of pasta. Topped with fresh parsley and red pepper flakes. It’s the perfect Sunday sauce. And we love a good mussels recipe in the summer. And of course a good glass of white wine to pair with it.
This weekend was another super gorgeous and super fun one. I am totally sad to see it go. As I am with every weekend, but as each weekend goes by this summer the scaries get scarier because summer is FLYING. And I am huge summer girl who is going to be super sad when Labor Day is over.
But enough dwelling on the summer flying. Time to enjoy the moments we still have, and this very moment that includes this delicious mussels pasta !! Cheers to summer Sunday’s and summer Sunday sauce !!
Ingredients
2 tablespoons olive oil
2 tablespoons butter
1 large shallot; chopped
1 garlic clove; chopped
2 pounds mussels
1/2 cup white wine
1/2 cup heavy cream
salt and pepper
red pepper flakes
chopped parsley
1 pound pasta
Directions
In a medium size pot, heat the olive oil and the butter. Add the shallots and garlic. Sauté for a few minutes. Add the mussels and wine then cover the pot. Let them steam for a few minutes until all the mussels have opened.
Remove the mussels from the pan with a slotted spoon. Add the cream to the pot. Let it simmer for a few minutes until thickened and reduced a bit. Add salt, pepper, and red pepper flakes to taste.
Cook the pasta. Drain, saving 1 cup of pasta water. Add the pasta to the skillet with the sauce. Toss to combine, adding pasta water as needed. Top with the mussels, additional parsley, and red pepper flakes.
