Creamy Garlic Scape Pesto Pasta

Creamy Garlic Scape Pesto Pasta. The noodles that everyone loves smothered in a garlic scape and basil pesto that’s creamy and delicious and so so good. Definitely a winner for curing the Sunday scaries !!

We found garlic scapes at the farmers market at the beach, and we are so excited about it since we can’t typically find them at the store and they are seasonal. So we decided we had to make them right away in a creamy pesto. And we decided we also needed to use these noodles because apparently they are pretty popular right now !

But anyway, this pesto is simple but it’s so good. We love experimenting with pestos in the summer and this seasonal ingredient was perfect. You’ve got the classic basil in this as well, but the garlic scapes give it a very unique flavor that I can’t quite put my finger on. But trust me guys, it’s good. So if you find garlic scapes anywhere definitely pick them up.

We are super happy that the farmers market down the shore had these garlic scapes. We are definitely interested in experimenting with them in other recipes while they’re still around, so stay tuned !! Definitely going to be picking these up again at the market. And the best part…this creamy delicious pasta is the perfect way to help cure the scaries which I definitely have today !!


Ingredients

  • 4 - 5 roughly chopped garlic scapes

  • 2 cups fresh basil leaves

  • 1/2 cup pine nuts

  • 1 cup olive oil

  • 1/2 cup parmigiana reggiano

  • salt and pepper to taste

  • 1 cup heavy cream

  • 1 pound pasta

Directions

  1. In the bowl of a food processor, pulse together the garlic scapes, basil, pine nuts, olive oil, and parmigiana reggiano. When well combined, process on high speed. When creamy transfer to a bowl and season with salt and pepper.

  2. In a large skillet, warm the cream and add the pesto. Keep warm over low heat.

  3. Cook the pasta. Drain, saving 1 cup of cooking water. Add the pasta to the skillet with the pesto. Toss to coat with the pesto, adding cooking water as needed. Serve topped with fresh basil and red pepper flakes.
