Is it really Memorial Day without a barbecue night? I think not. And can you really do an MDW barbecue without a pasta salad?! No way.
This is one of my ALL time favorite pasta salads. If you think you’ve seen it before on our Instagram, it is because you probably have. Last year we made it for Memorial Day and 4th of July. I don’t know what it is about this pasta salad, but it is filled with so much creamy, delicious, yet very simple goodness.
You’ve got all those summery ingredients mixed with the pasta. The roasted corn, the colorful tomatoes, the crispy thick-cut bacon, the creamy avocado. Then there’s the herbs…lots of basil and chives. And the best part…the creamy goat cheese. So the pasta is extra creamy from both the avocado and the cheese. Add a little bit of flavor and spice with some red pepper flakes and black pepper. You guys this pasta is seriously so good. And bonus?! It is super easy, so if you've got a lot of people coming over or you’re making a lot of different foods this one is super quick and easy and everyone loves it.
If you see us making this again for 4th of July, you will obviously know why ;)) !! But anyway today we are having my aunt and uncle over for our little barbecue. We obviously have WAY too much food as always. But it’s a BBQ, so you kind of have to do it up big no matter how many people you have, you know?!
Well time to dig into one of my favorite BBQ dishes and enjoy my Limeaide and Vodka…Memorial Day cocktail of choice ;)) cheers !!
Ingredients
1/2 cup olive oil
3 ears corn kernels; roasted
1 cup basil
1/4 cup chives
10 ounces cherry tomatoes; halved
1/2 pound cooked chopped bacon
salt and pepper
red pepper flakes
1 avocado; diced
1 cup crumbled goat cheese
1 pound short cut pasta
Directions
Cook the pasta. Drain, saving 1 cup of pasta water. Transfer to a large mixing bowl.
Add olive oil, roasted corn, tomatoes, basil, and chives. Toss to combine. Add the cooked bacon and red pepper flakes. Fold in the avocado and goat cheese. Taste, adding additional salt and pepper. Add pasta water if needed and serve.
