Clams Casino Pasta. Think your classic clams casino but in pasta form…does it get more delicious and decadent than that ?! Crispy thick-cut bacon, cherry tomatoes, lots of fresh parsley, and of course the main attraction…clams !! Because you can’t do Labor Day weekend without a good clams and pasta dish !! And a good marg of course…cheers !!
So our weekly summer Saturday tradition this year has been going to the farmers market for fish and clams. And every week, do you want to know what we make?! Clams and spaghetti. Literally. Every. Single. Saturday. And to be honest, I am not the least bit sad about it. I guess you can probably assume clams and spaghetti is one of our favorite dishes.
My aunt came to visit today, and we definitely wanted to do a super big dinner. So, we picked up all our usuals from the farmers market which of course included clams. We also picked up some super fresh tuna, salmon, and scallops. It is always quite a feast for summer Saturday’s !!
So sadly today is the last farmers market of the season which is super depressing. And tonight we are having clams and spaghetti, but we have decided to change things up a bit and go for a clams casino version of clams and spaghetti. A little bacon, a little tomatoes, a little shallots, a little parsley. It’s not our traditional clams and spaghetti, but it is a super fun twist for a clam pasta recipe.
Today was an absolutely gorgeous day. The weather was amazing. The vibes were incredible. The only part that wasn’t my favorite was knowing that this Saturday is the last true summer Saturday. Labor Day weekend always feels like the last hoorah of the summer even though technically it’s still summer for a few more weeks.
So, cheers to the very last summer Saturday of the season. You guys know I have been dreading this day for a while now. And….it has finally arrived. The summer may be coming to an end, but we hope you aren’t sick of our summer recipes just yet because they are still going to be coming your way !!
Ingredients
1/4 cup olive oil
1/3 pound bacon; chopped
1 shallot; thinly sliced
1/4 teaspoon red pepper flakes
1 cup white wine
50 little neck clams
1/2 cup chopped parsley
2 cups cherry tomatoes; halved
salt and pepper to taste
1 pound linguine
Directions
In a large skillet, heat the olive oil. Add the bacon. Cook until the bacon starts to brown and crisp. Add the shallots and red pepper flakes. Continue to cook another few minutes. Add the wine and reduce a few minutes. Add the clams, parsley, and tomatoes. Cover and cook about 5 - 7 minutes until the clams have opened. Discard any that do not.
Cook the pasta and drain. Add the pasta to the skillet with the clams. Taste and adjust seasonings. Top with additional parsley.
