Roasted Butternut Squash & Brown Butter Walnut Sage Pizza

Roasted Butternut Squash & Brown Butter Walnut Sage Pizza. Another night of brown butter and I am not sorry about it. And I am allll about a good fall pizza friday. This one is a crispy grilled crust topped with mozzarella, blue cheese, roasted butternut squash, and thick-cut bacon. And finally drizzled with brown butter, toasty walnuts, and crispy sage leaves. Another fall pizza Friday !! We honestly haven’t done a pizza night in a while, and I have SO many fall pizza ideas. So I thought today was finally the day to bring it back. Since I have so many ideas for fall pizza recipes, I was literally going back and forth in my head all morning with which one I wanted to make.

I finally narrowed it down to two options. A butternut squash pizza or a mushroom pizza. Ultimately, I went with the butternut squash, and I am honestly not sure what made my indecisive self decide on this. BUT it was so so good you guys. But stay tuned because a mushroom pizza will be coming ;)))

The toppings for fall pizzas are pretty endless, but I ended up pairing the roasted butternut squash with some thick-cut crispy bacon. I used two cheeses, mozzarella and blue cheese. Then some brown butter of course. I toasted the walnuts and sage in the brown butter then drizzled it all over the top of the pizza.

Finally, I decided I would grill this one because it literally feels like a summer day outside and I am totally loving it. Is anyone else loving this warm fall weather as much as I am?!

Ingredients

  • 1 pizza dough; homemade or store-bought

  • 1 butternut squash; cubed

  • 2 tablespoons olive oil

  • salt and pepper

  • 3 sliced thick-cut bacon

  • 4 tablespoons butter

  • 1/3 cup chopped walnuts

  • 20 fresh sage leaves

  • 2 tablespoons crumbled blue cheese

  • 4 ounces shredded mozzarella

Directions

  1. On a baking sheet lined with parchment paper, add the butternut squash. Drizzle with olive oil and sprinkle with salt and pepper. Lay the bacon slices over the butternut squash. Transfer to a 425 degree oven and roast for about 20 - 25 minutes or until squash is cooked through and bacon is crispy. Crumble the bacon and set aside.

  2. In a small skillet, melt the butter for 3 - 4 minutes until browned and smells nutty. Add the walnuts and sage leaves. Cook until walnuts are toasted and sage is crisp.

  3. Spread the dough out on an oiled grill pan using your fingertips. Using a fork, pierce holes throughout. Heat the grill to medium heat and place the pizza pan on the grill. Cook approximately 3 - 4 minutes until crust is browned. Flip over and remove from grill. Spread the mozzarella and blue cheese evenly over the dough. Place back on the grill for another 3 - 5 minutes until the other side of the crust is crispy.

  4. Assemble the pizza. Top with roasted butternut squash, bacon, walnuts, sage, and drizzled with the brown butter. Sprinkle with fresh cracked black pepper and serve.
