As tempting as it can be to skip breakfast on thanksgiving to save yourself some room for the rest of the day…definitely don't !! First of all, thanksgiving is a day that is all about eating, so why not start early with a little something sweet with your cup of coffee or tea?!
This French toast bake is super easy, super festive, and super delicious. And the best part is, it can all be done ahead of time. So when you wake up on thanksgiving morning, all you need to do is put this skillet in the oven. That makes for so much less stress when you’re trying to get 1,000 other dishes made for later.
Another reason to love breakfast on thanksgiving morning is if you’re a liiiittle hungover from thanksgiving eve celebrations. I know sometimes I go a little too hard on thanksgiving eve, so putting something in my stomach first thing in the morning with a big cup of coffee can sometimes really cure that hangover right away.
And finally, with this Pumpkin Spice French Toast Bake, you definitely won’t want to skip breakfast. It has all the flavors of fall, and the key is serving it drenched in all that apple cider maple syrup !!

Ingredients
1 loaf challah bread; cut into 1 inch thick slices
8 ounces cream cheese
4 eggs
1 1/2 cups milk
3/4 cup pumpkin puree
1 tablespoon vanilla
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
1/2 teaspoon salt
pomegranate arils for serving
For the Apple Cider Maple Syrup
1 cup apple cider
1/2 cup maple syrup
2 tablespoons butter
Directions
Preheat the oven to 375 degrees. Grease a large skillet.
In a large, shallow bowl, whisk the eggs, milk, pumpkin puree, vanilla, pumpkin pie spice, cinnamon, and salt.
Smear the cream cheese onto each slice of bread. Arrange the bread slices, cream cheese side up, in the skillet. Pour the egg mixture over the bread. Let sit overnight or for about 1 hour. Transfer to the oven and bake for about 45 - 50 minutes.
Meanwhile make the apple cider maple syrup. In a medium sauce pan, add the apple cider and maple syrup. Bring to a boil. Reduce heat and simmer for about 15 minutes or until mixture has reduced and thickened.
Serve French toast drizzled with apple cider maple syrup and topped with pomegranate arils.
