Chai Spiced Banana Breakfast Muffins

Chai Spiced Banana Breakfast Muffins. The Chai Spice is homemade using all Simply Organic Foods all pure, organically farmed spices. These are the most delicious, fluffy, and totally addicting muffins. And ooey gooey spiced muffins are the perfect way to welcome fall and a weekend brunch. Trust me, these will have everyone going back for seconds. And don’t forget a mimosa or maybe two… after all, it’s weekend brunch, so keep it sweet with both a breakfast cocktail and a Chai Spiced Banana muffin !!

‘Tis the season for fall brunch. I loooove a good fall weekend brunch party, and you always need a little something sweet at a brunch party. These muffins are super easy to serve and super fun as a lighter grab and go bite at a brunch party. They are also perfect for fall with all the autumn inspired spices.

The chai spice in these muffins is homemade which makes them even better…because everything is better homemade, you know?! Then you’ve got the banana, oats, honey, chai glaze. All the best fall flavors in one bite. Bonus? They are super easy to make.

Honestly, as much as I love muffins at a brunch, these little guys are also perfect for dessert. So whether you’re looking for something sweet with breakfast in the morning or a late night snack, these need to be you’re fall baking go-to !!

And speaking of fall brunch parties, I have one coming up this Saturday for a birthday !! I am super excited and who knows…maybe I will be brining these !! With a mimosa or a Bloody Mary or both ;)) !!


Ingredients

For the Muffins

  • 1 3/4 cups all-purpose flour

  • 2 1/2 teaspoons chai spice, (recipe below)

  • 1/ 2 teaspoon baking soda

  • 1 teaspoon salt

  • 1 cup packed, mashed ripe bananas (about 3)

  • 2/ 3 cup honey

  • 1/ 3 cup melted coconut oil

  • 1 egg, room temperature

  • 1 tablespoon turbinado sugar

  • 1/ 3 cup old-fashioned oats

  • 1 teaspoon Simply Organic Vanilla Extract

  • Coconut oil cooking spray, as needed

For the Glaze

  • 1 cup confectioners sugar

  • 1/ 2 teaspoon chai spice, (recipe below)

  • 2 tablespoons milk

Directions

  1. Preheat oven to 350°F. Spray a 12- slot muffin pan with coconut oil cooking spray.

  2. In a large bowl, sift together flour, chai spice, baking soda and salt and set aside. In a separate large bowl combine mashed bananas, honey, coconut oil, egg, turbinado sugar and vanilla extract. Stir with a whisk until everything is well incorporated.

  3. Add oats to the wet mixture and fold in with a spatula. Add flour mixture to the wet ingredients in two batches and fold until well incorporated.

  4. Fill each muffin tin about 2/3 of the way. Bake until golden brown and a toothpick comes out clean, 20-23 minutes.

  5. While the muffins bake, make the chai glaze. In a bowl, add confectioners sugar, chai spice and milk. Using a whisk, mix until you get a smooth glaze.

  6. Let cool, drizzle with chai glaze and serve. Muffins will keep in an airtight container for up to 5 days.

For the Chai Spice

Directions

  1. Combine all spices in a small bowl, whisking until well combined.

  2. Store in an airtight container. Use as needed.
