The Monday after a holiday week is always rough. It’s so hard to get back into a routine especially when it is this cold and this dreary today. But that’s why you need a cozy fall/winter inspired soup to make today seem a little less depressing. Plus it’s the week coming off a holiday and soup is not only comforting, but it’s a lighter option after all the indulgent eats.
This soup is filled with a butternut squash and apple base and it’s loaded with spices that make it feel cozy and taste delicious. It’s definitely a unique flavor combination with the butternut squash and apple. Then there are tons of both sweet and savory spices. It’s topped with pumpkin seeds and chives and extra apples and sour cream and it’s so so good.
I am definitely a little sad today after the holiday weekend has officially come to an end. But I am so happy Christmas is right around the corner !! Ingredients
2 tablespoons olive oil
2 cloves garlic; chopped
1 onion; chopped
1 teaspoon Simply Organic Ground Ceylon Cinnamon
1/ 2 teaspoon Simply Organic Cayenne Pepper
1/ 2 teaspoon Simply Organic Garam Masala
1 peeled and diced butternut squash
2 cored and chopped Granny Smith apples
6 cups vegetable broth
kosher salt, as needed
1 lime, juiced
1/2 teaspoon Simply Organic Vanilla Extract
cilantro, chopped for garnish
pumpkin seeds, for serving
sour cream or coconut cream, optional, for topping
Directions
In a large pot, heat the oil. Add the onions and garlic and sweat for 5 minutes until translucent. Add Simply Organic Ground Ceylon Cinnamon, Simply Organic Cayenne Pepper and Simply Organic Garam Masala and sauté for 2 minutes.
Add the butternut squash, apples, vegetable broth, and salt. Cover and cook for 25 minutes until butternut squash are tender and cooked through.
Transfer to a blender and blend until smooth. Add the lime juice, Simply Organic Vanilla Extract and stir to mix well.
Transfer to a serving bowl, garnish with cilantro, pumpkin seeds, sour cream or coconut cream and serve hot.
