Buttermilk Apple Cake. Ok guys I swear this is not me transitioning to fall recipes, we were just reallyyyy craving apple cake. And this one is super gooey, super moist, and super delicious. And that’s really all you can ask for when it comes to cake, you know?! The buttermilk and sour cream in this cake are the key, with all those fresh honey crisp apples…ugh this is SO addicting !! Ok ok ok…I know I promised no fall recipes just yet. But this one can technically be a summer recipe right?! Cake is an all year around dessert…the apples might make it fall…ish. BUT apples in the summer can still be a thing. And to be honest, I was just kind of craving this apple cake.

It’s super gooey and moist in the center, a little crispy on the edges, and filled with tons of delicious honey crisp apples. It brings together a perfect combination of flavors and textures. Like I am talking melt in your mouth flavors in this one guys !!

Today was a beautiful day at the beach. The sun was shining and I made this cake…so I am obviously going to associate it with summer since I am still getting alllll those summer vibes. And while I love a good fall dessert…I seem to always make apple cake in the summer months. I don’t know why, but it always just seems to happen that way.

Anyway it is a beautiful night here at the beach, and I am currently sipping on a beachy rum and orange juice. So I am going to get back to enjoying this beautiful night, but I will definitely be having a BIG slice of this cake later. It’s honestly one of my favorites, so you guys need to try this !!


Ingredients

  • 1 1/2 cups flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1/2 cup unsalted butter; room temperature

  • 1 cup granulated sugar

  • 1 1/2 teaspoons vanilla

  • 3 eggs

  • 1/4 cup sour cream

  • 1/4 cup buttermilk

  • 3 - 4 peeled, sliced apples

  • powdered sugar for serving

Directions

  1. Preheat the oven to 350 degrees. Grease a 9 inch springform pan.

  2. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.

  3. In a large bowl, cream the butter and sugar until fluffy. Beat in the eggs, one at a time. Add the vanilla. Stir the buttermilk and sour cream together in a small bowl. Alternate adding the dry ingredients and buttermilk mixture to the batter until fully combined.

  4. Fold in the apples. Pour the batter into the prepared pan. Transfer to the oven and bake for about 45 - 50 minutes or until cake is set. Serve topped with powdered sugar.
