It’s game day guys !! While the eagles have totally been disappointing the city of Philly, the tailgates and game day drinks and eats have not. Whether you’re tailgating or watching the games from home, good drinks and snacks are always necessary. Am I right?!
Enter, these cheesy Buffalo Cauliflower bites. They’re loaded with parmesan and cheddar cheese, cayenne and paprika and hot sauce for a little spice, and topped with fresh chives. And every spicy snack needs a little cool down, so we paired these addicting bites with a homemade ranch dressing. You guys, I seriously could not stop eating these.
Today I am going to the tailgate and xfinity (if you know xfinity, you know). It is the last Sunday home game until November and the weather is beautiful once again today. It is the perfect fall tailgating weather, and I am super excited. I have pretty much been in Philly all weekend, so I figured I would keep the city and fall vibes going with a good Sunday football tailgate and xfinity.
So, here you have my perfect tailgating and game day snack. Which I will totally be enjoying with a Bloody Mary in one hand and a mimosa in the other !! Cheers to Sunday football !! Go birds !!
Ingredients
1 large head cauliflower; cut into florets
1/4 cup olive oil
3 tablespoons hot sauce
1 teaspoon smoked paprika
1/2 teaspoon cayenne
salt and pepper
1/2 cup grated parmesan
1/2 cup shredded cheddar
For the Ranch Dressing
3/4 cup sour cream
1/2 cup mayonnaise
1 tablespoon buttermilk
juice of 1/2 lemon
2 tablespoons fresh chopped chives
1 teaspoon dried parsley
1 teaspoon dried dill
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
salt and pepper
Directions
Preheat the oven to 425 degrees. On a baking sheet lined with parchment paper, toss the cauliflower, olive oil, hot sauce, paprika, cayenne, salt, and pepper. Add the parmesan and toss to coat. Transfer to the oven and roast for about 20 minutes. Remove from the oven and sprinkle the cauliflower with the cheddar. Return to the oven and cook for an additional 10 minutes or until the cauliflower is crispy and golden.
Make the ranch dressing. In a small bowl, combine the sour cream, mayonnaise, milk, lemon juice, chives, dried parsley, dried dill, garlic powder, and onion powder. Season with salt and pepper. Stir to combine.
Serve cauliflower topped with fresh chives and dipped in ranch.
