Pies on thanksgiving are basically essential. And two of the most classic pies for the holidays are pumpkin and pecan. So why not combine them both? This one is so good you guys. It’s a little bit of smooth and creamy pumpkin paired with a chocolatey bourbon pecan layer. The two combined is basically one big festive bite of thanksgiving flavors.
Honestly, by the time we get to dessert on thanksgiving, we are either too full or only take one bite. But I always try to force a bite even if I feel overly full because what is thanksgiving without pie?
Our tradition after thanksgiving dinner is watching Home Alone 2 by the fire with a nightcap. Home Alone is my all time favorite Christmas movie, and I love this tradition that we have started.
Anyway, thanksgiving is officially less than a week away. I am so so excited and have so much planning to do this weekend. The thanksgiving prep starts now !!
Ingredients
1 pie crust (homemade or store-bought)
For the Pumpkin Pie Layer
1 cup pumpkin puree
1/4 cup heavy cream
1/2 cup brown sugar
1 egg
1/4 teaspoon salt
1 teaspoon vanilla
For the Bourbon Pecan Pie Layer
1/2 cup sugar
4 tablespoons butter; room temperature
2 eggs
1/2 cup maple syrup
1/4 teaspoon salt
1 teaspoon vanilla
2 tablespoons bourbon
1 1/2 cups pecans
1 cup chocolate chunks
Directions
Preheat the oven to 350 degrees. Grease an 8 inch pie plate. Press the pie crust into the plate and transfer to the fridge.
Make the pumpkin pie layer. In a large bowl, combine the pumpkin puree, heavy cream, brown sugar, egg, salt, and vanilla. Pour the pumpkin mixture into the bottom of the prepared pie plate.
Make the bourbon pecan pie layer. In another large bowl, cream the sugar and the butter until fluffy. Add the eggs, one at a time. Add the maple syrup, salt, vanilla, and bourbon until combined. Fold in half the pecans. Carefully pour the pecan pie layer over the pumpkin layer. Sprinkle in the remaining pecans and chocolate chips.
Transfer to the oven and bake for 50 - 55 minutes or until center is set. Allow the pie to cool completely before serving.
