Watermelon Mint Martini
Happy hour at the beach is every hour because why not?! So, we decided to make this mid-day watermelon martini to make Saturday fun!
This recipe is super easy and super delicious, and we had too much fun drinking these refreshing drinks! Watermelon in the summer is a fruit you just can’t go wrong with! We kicked off our Saturday with our delicious Eggs in Hell recipe, laughing about funny memories from the night before, and drinking our famous Bloody Mary’s! Before we hit the beach, we made the puree for our watermelon martinis that were supposed to be for happy hour, but we couldn’t resist giving them a try! Like I said before happy hour is every hour when you're on island time! Then we enjoyed an absolutely gorgeous Saturday on the beach, came home, and made another delicious summery dinner! We had a Tomato Corn Pie, Dijon & Dill Egg Potato Salad, and Baked Halibut with fresh Jersey tomatoes and basil!

Ingredients:
4 cups of watermelon chunks
¼ cup of fresh lime juice
¾ cup of Smirnoff Watermelon Mint flavored vodka
1 small can of club soda
Directions:
In a blender puree the watermelon chunks until smooth
Pour in the lime juice and stir
Pour the mixture into a pitcher and stir in the vodka
Pour in about ¼ of the mixture into a shaker, topping it with a ¼ cup of club soda; shake vigorously; pour into a martini glass and garnish with watermelon chunks, sliced limes, and mint leaves
