Vanilla Blackberry Tart
Vanilla Blackberry Tart. This is the perfect springtime dessert recipe. It’s simple, it’s easy, and it’s SO SO good. You can pretty much do this dessert with any berry you’d like...because if you think you’ve seen this dessert before, it’s because you have ;))). We made this a few weeks ago but with strawberries but we loved it so much we decided to recreate it with blackberries. Just fill that cinnamon graham cracker crust with a berry of your choice cream cheese mixture and you’ve got yourself the simplest spring dessert !! Happy Saturday guys !!
One of my favorite seasons for baking is spring. There are so many fun, vibrant things to bake up when it’s springtime. You’ve got all the delicious fruits and fresh berries. All the citrus. All the bright colors.
While this tart is no-bake, I still consider it “baking” so to speak. It’s dessert so it falls under the baking category for me. But the fact that it is no-bake makes it even better. Because it’s super delicious and seriously comes together in minutes. And my favorite part? You can pretty much use any fruit or berry that you’d like.
Sooo….if you see this dessert again, maybe next time with a different fruit you should definitely not be surprised !!
Ingredients
2 cups graham cracker crumbs
1 teaspoon cinnamon
8 tablespoons butter; melted
12 ounces cream cheese
1/2 cup powdered sugar
1 cup heavy cream
2 teaspoons vanilla extract
2 tablespoons blackberry jam + more for topping
1 pound blackberries
3 tablespoons grand mariner
1 bunch mint leaves; chopped
zest 1 lemon
Directions
Preheat the oven 350 degrees. In a medium bowl, combine the graham crackers, cinnamon, and butter. Press the mixture into a tart dish. Transfer the the oven and bake until crust is toasted for about 10 minutes.
In a medium bowl, beat the cream cheese and powdered sugar on high speed with a hand mixer until smooth and creamy. Add the heavy cream 1/4 cup at a time. Add the vanilla and whip on high speed until fluffy. Stir in the blackberry jam using a spatula. Spoon the cream filling over the graham cracker crust and chill for 2 hours.
Meanwhile in a small bowl, toss the blackberries, grand mariner, mint leaves, and lemon zest. Let the blackberries marinate for about 10 minutes.
Serve tart topped with additional blackberry jam, soaked blackberries, and fresh mint leaves.
