Strawberry Shortcake

Strawberry Shortcake. The perfect springy or summery layer cake. Three gooey layers of strawberry jam and buttermilk cake with cream cheese whipped cream and grand marnier soaked strawberries smothered between each layer. Super addicting but it’s Saturday so treat yourself, you know?!

Saturday’s on the island…a different type of feeling. Especially when it is THIS beautiful out. Today was finally my first beach day at the new house. What a feeling it was walking off the beach…and back to the house to make this super gooey, jammy, strawberry shortcake.

Saturday’s with sun always need a little bit of sweetness. And today I definitely wanted to make something summery. So, we actually had this cake last weekend for mother’s day too. I wanted to bake something my mom loves, so Strawberry Shortcake it was. We loved it so so much, that I decided I’d make it again this weekend…because why not?!

We honestly couldn't have asked for a more perfect day. Actually…a more perfect weekend. It was super relaxing, super beautiful, and a very amazing sneak peak into what summer weekends are going to look like from now on. And we finished it off with this delicious cake !! Happy Saturday beautiful people !!


Ingredients

  • 1 cup canola oil

  • 1/2 cup plain greek yogurt

  • 3 eggs

  • 2 cups sugar

  • 1 tablespoon vanilla

  • 1 1/2 cups buttermilk

  • 3 3/4 cups flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 cup strawberry jam

  • 2 cups strawberries; sliced

  • 3 tablespoons grand marnier

For the Whipped Cream

  • 2 cups heavy cream

  • 8 ounces cream cheese

  • 1/4 cup powder sugar

Directions

  1. Preheat the oven to 350 degrees and grease three 8-inch cake pans.

  2. In a large bowl, beat the canola oil, yogurt, eggs, sugar, vanilla, and buttermilk with an electric hand mixer. Add the flour, baking powder, baking soda, and salt. Beat again until combined. Fold in the strawberry jam leaving streaks.

  3. Pour the batter evenly amongst the three cake pans. Transfer to the oven and bake for about 30 minutes or until just set. Remove from oven and let the cakes cool completely before assembling.

  4. Meanwhile make the whipped cream. In a large bowl beat the heavy cream, cream cheese, and powdered sugar until stiff peaks form. Store in the fridge until cakes are ready to assemble.

  5. Place the strawberries in a medium bowl. Add the grand marnier and toss to coat. Let strawberries soak for about 1 hour.

  6. To assemble, place one cake on a serving plate. Spread a layer of the whipped cream over the cake and top with a handful of strawberries. Repeat with the remaining 2 cakes and serve.
