Slow-Cooker Dijon Chicken
Slow-Cooker Dijon Chicken. The week in between Christmas and the new year is all about comfort foods. Cozy chicken dishes loaded with herby mushrooms and spinach in a creamy Dijon white wine sauce does just the trick. So much goodness on top of a creamy cauliflower mashed. I mean does it get much cozier than this?!
Today we’re breaking out the slow-cooker because the week in between Christmas and New Years needs comfort foods that are super easy to make. Not to mention delicious. This one is cozy and loaded with flavors.
The herby dijon mustard and white wine sauce has that decadent flavor that everyone knows and loves around the holidays. But there is just something so comforting about a slow-cooker meal that we need leading up to the new year. Plus the addition of spinach and herby mushrooms is totally necessary and delicious.
BUT my absolutely favorite part of this dish is the cauliflower mashed. They are SO SO delicious. I mean, if you’re not into cauliflower, regular mashed potatoes are just as good. Totally great too! But we really recommend giving the cauliflower mashed a try. They are a little different from your everyday mashed potatoes. But still decadent and definitely delicious!

Ingredients:
4 bone-in chicken breasts; skin on
2 tablespoons olive oil
2 tablespoons fresh thyme leaves
2 tablespoons fresh sage; chopped
salt and pepper
1 cup white wine
1/2 cup heavy cream
2 tablespoons dijon mustard
1 shallot; chopped
1 garlic clove; minced
2 tablespoons butter
14 ounces mixed mushrooms; sliced
2 tablespoons fresh rosemary leaves
5 ounces baby spinach
mashed potatoes or mashed cauliflower
Directions:
Rub the chicken with thyme, sage, salt, and pepper. In a large skillet or aluminum insert of your slow-cooker, heat the olive oil. Add the chicken and sear until brown on both sides. If using an aluminum insert, place into the slow-cooker.
In a medium bowl, mix the wine, cream, mustard, shallot, garlic, salt, and pepper. Pour over the chicken.
Meanwhile in a medium skillet, melt the butter. Add the mushrooms, rosemary, salt, and pepper. When caramelized add to the slow-cooker with the chicken. Cover the slow-cooker. Cook on low for 4 hours or high for 2 - 3 hours.
During the last 30 minutes of cooking, add the spinach. Toss to combine. Serve over mashed potatoes or mashed cauliflower.
