Maple Chipotle BBQ Bacon Chicken with Grilled Corn Polenta. Summer forever, you know?! With the official start to fall, we obviously had to do one last summer recipe…ok maybe it’s not the last but who doesn’t love summer dishes?! This one is BBQ chicken sprinkled with Williams Sonoma Ultimate Grilled Chicken Rub and wrapped in thick-cut bacon and smothered in all that maple chipotle sauce. It’s plated on a creamy grilled corn polenta and served with sliced avocado and chives. If you need one last recipe to celebrate the summer definitely let this one be it !!

Ok, so I know it’s technically fall now. But just one more summer recipe can’t hurt right?! But let’s be honest, you guys know this won’t be my last summer recipe. I mean the weather is still warm, the sun is still shining, and honestly it still feels somewhat like summer to me.

September is like that in between month where you can’t tell if you’re feeling summer or fall or both. For me it’s a little bit of both depending on the day. This past weekend I was definitely feeling fall. But today I am so here for the summer vibes.

It was nice out today, and we wanted to make a chicken dish. So the first thing that came to my mind was BBQ chicken on the grill. That’s one thing we definitely never have when the weather turns, so I wanted to make this recipe.

This one is so good. You can use any kind of BBQ sauce you’d like or make your own. Tonight we went with a maple chipotle sauce and William Sonoma’s Ultimate Grilled Chicken Rub. The combination is perfect. A little smoky, a little sweet, a little spicy. Then wrap the chicken with thick-cut bacon. It is SO good you guys.

But if you really want to take your chicken to the next level….plate it on top of a creamy grilled corn polenta. It really makes this BBQ chicken that much better. Top it with some avocado and chives. Summer in a bowl !! And cheers to that !!


Ingredients

For the Chicken

  • 1 1/2 - 2 pounds boneless thin sliced chicken breasts

  • Williams Sonoma Ultimate grilled chicken rub

  • 1 pound applewood smoked bacon

  • 1 1/2 cups barbecue sauce

For the Polenta

  • 4 cups chicken broth

  • 1 1/2 cups whole milk

  • 1 1/2 cups polenta

  • 1/4 cup butter

  • 1/2 cup parmesan cheese

  • 1 avocado; sliced

  • 2 ears corn; grilled and kernels removed

  • fresh chives for garnishing

Directions

  1. Sprinkle both sides of each chicken breast generously with Williams Sonoma Ultimate grilled chicken rub. Wrap 1 slice of bacon around each breast seam side down. Place the chicken on a large baking sheet lined with parchment paper. Bake at 375 degrees for 15 -2 0 minutes.

  2. Spread each piece of chicken with barbecue sauce and grill over medium heat another 5 - 10 minutes until cooked through.

  3. Meanwhile make the polenta. In a medium sauce pan, bring the broth and milk to a slow boil. Slowly whisk in the polenta. Stir until thickened. Add the butter and cheese.

  4. Serve polenta topped with chicken, avocado, grilled corn, and chives.
