Grilled Barbecue Chicken Skewers
Skewer recipes are a must in the summer months! They are so fun, and you can get super creative with what you decide to do with them! Today we are sharing our barbecue chicken skewer recipe, but we also love to make skewers using shrimp and swordfish! We can’t wait to share those skewer recipes later in the summer as well!
Our barbecue chicken skewers include an array of veggies including yellow squash, zucchini, onion, red and green peppers, and cherry tomatoes! We also love using our homemade barbecue sauce on our chicken skewers, but feel free to marinate them however you like! What are your favorite skewer recipes? a. Ingredients:
1 small yellow squash; sliced in rounds
1 small zucchini; slice in rounds
1 red pepper; cut in pieces
1 green pepper; cut in pieces
1 Vidalia onion; sliced
5 oz of cherry tomatoes
1 pound of boneless chicken breats; cut into chunks
Salt and pepper
Olive oil
Barbecue sauce; homemade or store-bought
Skewers; bamboo or metal
b. Directions:
Thread the chicken and the vegetables alternating on the skewer making them as big or small as you would like(we use 3 pieces of chicken and vegetables in between on each skewer)
Drizzle the skewers with olive oil, salt, and pepper then sear them on a medium heat grill; after about 5-7 minutes start basting them with the barbecue sauce continuing to turn until cooked through, they should take about 15-20 minutes total
