Barbecue Bacon Chicken Skewers with Corn Salsa. Spicy bbq bacon wrapped chicken smothered in Williams Sonoma’s Ultimate Grilled Chicken Rub. Topped with a spicy corn and feta salsa. Served alongside avocado crema. It’s so summery it’s so good and you’re going to be addicted !!
It’s time for this weeks skewers !! I feel like we have been making skewers pretty often lately, but when it’s summer and it’s grilling season it’s just so much fun. I love how creative you can be with skewers also. The possibilities are endless.
Tonight we doing chicken skewers. But smothered in our favorite seasoning for grilling chicken…William Sonoma’s Ultimate Grilled Chicken Rub. And to make things ever better we wrapped the chicken in thick-cut applewood bacon. And finally to make things even more summery we topped them with a spicy corn and feta salsa and paired them with an avocado Crema. The salsa is the perfect spicy kick with the jalapeños but the feta gives it just the right amount of salty cool down.
These skewers and the salsa are all about the grilling. The skewers are toasty and charred. The corn is also grilled giving the salsa that smoky flavor. And the creamy avocado is the perfect sauce for dipping and dunking. And you guys know I am a biiiiig sauce girl. So just barbecue sauce wasn’t enough on these delicious skewers.
Soooo…don’t be surprised this weekend when you see us grilling up another round of skewers at the beach. I am giving you guys a little bit of a sneak peak of what’s on the menu…but it’s fathers day weekend so what better way to celebrate than with grilled skewers, ya know?! And of course a cocktail will be in hand…counting down the days !!
Ingredients
2 pounds boneless chicken breasts; cut into chunks
2 tablespoons William Sonoma Ultimate Grilled Chicken Rub
1 pound bacon; strips cut in half
1 cup barbecue sauce
For the Corn Salsa
1 jalapeño; grilled
4 ears corn; grilled
1/2 cup fresh basil; chopped
juice of 1 lime
juice of 1 lemon
1 teaspoon red wine vinegar
1/2 cup crumbled feta cheese
salt and pepper
1 avocado; mashed or whipped for serving
Directions
On a large baking sheet, sprinkle the chicken with the rub. Wrap each piece with the bacon and place on the baking sheet seam-side down. Transfer to a 425 degree oven and bake for about 25 minutes. Remove from oven and let cool. Thread the skewers with the chicken using about 4 - 5 pieces per skewer. Coat one side of the skewers with the barbecue sauce.
Heat the grill to medium-high heat. Place the skewers on the grill, barbecue sauce side up. Cook for about 3 minutes then flip. Coat the other side of the skewers with barbecue sauce and let cook for another 2 minutes. Remove from grill.
Chop the jalapeño and remove the corn kernels from the cob. Place in a large bowl. Add the basil, lime juice, lemon juice, and vinegar. Toss to combine. Add the feta and season with salt and pepper.
Serve skewers topped with corn salsa and alongside whipped avocado.
