Mother's Day Breakfast Board
Who doesn’t love a good breakfast board whether it is a holiday or just a regular Sunday brunch? We love doing breakfast boards because you can always get super creative with them and please everyone with their favorites! We typically prepare a brunch casserole every Sunday and drink some mimosas or Bloody Mary’s. However, when it is a holiday or special occasion we like to prepare a board because it is super festive and everyone loves them!
For Mother’s Day, we prepared a board that included a Gruyere Cheese and Chive Egg Soufflé then added everyone’s favorite sides! My brother loves breakfast sausage and hash browns so we included those two sides for him! My dad loves a good egg casserole with a bagel or toast on the side so the gruyere and chives egg bake was perfect for him, and we included bagels and franchaise bread! We used a chives cream cheese on the bagels which was absolutely delicious and paired perfectly with the eggs! My mom and I love to have our eggs and mimosas/Bloody Mary’s! Since it was her special day, we popped some bubbly and got out some fresh squeezed orange juice to enjoy with our egg dish! We also added a mix of berries to the board and bacon because who doesn’t love good bacon?!
Mother’s Day in Jersey was pretty gloomy, but our brunch definitely lightened the mood! After brunch my mom and I went on a shopping trip to Anthropologie, and later we made a Sangria for happy hour and had a delicious dinner with one of my mom’s favorite desserts, Strawberry Shortcake!

a. Ingredients for Gruyere Cheese and Chive Egg Soufflé:
6 oz of grated gruyere
½ cup of chopped chives
10 eggs
1 ½ cups whole milk
4 oz of cream cheese
b. Ingredients for Sides on Board:
Bagels
Francaise Bread
Applewood Smoked Bacon & Pepper Crusted Bacon
Strawberries, blackberries, blueberries, & raspberries
Hash Browns
Breakfast Sausage
Cream Cheese with Chives
Orange Juice and Champagne for Mimosas
c. Directions:
Pre-heat oven to 350 degrees
Spray a 9 by 13 baking dish with cooking spray
Sprinkle bottom of dish with gruyere and chives
Blend eggs, milk, cream cheese, ½ tsp of pepper, and ½ tsp of salt with an immersion blender
Pour egg mixture in baking dish over the chives and gruyere
Bake until golden for approximately 35-45 minutes; can be served warm or room temperate
Set out large board and arrange as you please for a special holiday or Sunday brunch!
