Monte Cristo Breakfast Casserole
If you are feeling French inspired one weekend, you will most definitely want to add this dish to your list of brunch casseroles! The flavors of the Canadian bacon, dijon mustard, swiss and gruyere cheeses, and raspberry preserves mesh together perfectly to create this delicious master piece! If you love a mix of sweet and savory this breakfast casserole is definitely for you!
We prepared this casserole the day before we took a day trip to the beach, so it was perfect that we were able to prepare it ahead of time! We made it on a Saturday afternoon, then woke up on Sunday, popped it in the oven, and took a trip to the beach for the day! We loved the combination of flavors and decided to share some of our creation with my Aunt and Uncle who also loved it since we had so much left over! This dish is pretty big so it is definitely perfect for a big Sunday brunch with lots of people around!
a. Ingredients:
1 loaf of St. Pierre’s Brioche bread
16 oz of Canadian bacon
4 oz of swiss cheese; sliced
¼ cup of Dijon Mustard
½ cup of raspberry preserves
1 ½ cups of shredded gruyere cheese
1 1/3 cups of whole milk
8 eggs
1 tsp of Kosher salt
½ tsp of ground pepper
b. Directions:
Spray a 13 by 9 inch baking dish with cooking spray
On a large surface covered with parchment paper, lay out the slices of bread
On half of the pieces arrange the Canadian bacon then the sliced swiss cheese, spread the raspberry preserves on top; on the half of the slices of bread spread the Dijon mustard
Put the pieces of bread together to make a sandwich; cut them into triangles
Place the triangles point side up in the prepared pan; set aside
In a large bowl whisk the eggs, milk, salt, and pepper; pour egg mixture over the sandwiches; sprinkle with the gruyere cheese; cover and chill overnight
Pre-heat oven to 350 degrees; uncover and bake for 30-35 minutes until golden or the eggs have set; remove and let cool for 10 minutes
