Breakfast Tortillas
I feel like I repeat myself every weekend, but I just cannot get over how amazing this summer has been! Between the weather, the summery foods, and the good times, it has most definitely been one for the books! While I am sad to see summer ending so soon, there are so many good weekends and memories to reminisce on!
This weekend at the beach we had our annual summer Mexican night, and we decided that we would keep the theme going today with these breakfast tacos. They are so easy to make, so adorable, and of course so delicious. The herby scrambled eggs pair amazingly with the bacon and balsamic glaze. You are going to be drooling over this combination of flavors!

Ingredients:
8 corn tortillas
8 eggs
½ cup of fresh herbs; minced (we used dill, chives, and basil)
½ pound of applewood smoked bacon; cooked and crumbled
2 ½ oz of spring mix; chopped
2 tbsp of butter
Salt and pepper
Balsamic glaze for drizzling
Directions:
Over medium-high heat, cook the tortillas on each side until charred; set aside
Whisk together the eggs, all of the herbs, salt, and pepper
Melt the butter in a non-stick skillet; add the eggs and scramble
Top each tortilla with the egg mixture, spring mix, and bacon; tie with kitchen string and arrange on a platter; drizzle with balsamic glaze and serve
