Spicy Salmon Wonton Nachos

Spicy Salmon Wonton Nachos. Crispy crunchy fried wontons topped with spicy salmon and mango avocado salsa. The salmon is tossed in kewpie mayo, sriracha, soy sauce, and sesame oil to give it that spicy kick and the mango avocado salsa is the perfect refreshing topping. So summery and so good. My favorite thing about being at the beach is fresh seafood. And when it’s that fresh, I feel the need to make it poke style. So tonight we are making our salmon poke style and served over a bed of wonton nachos. This has got to be one of favorite ways to make salmon or tuna poke.

The crispy wontons topped with mango avocado salsa and the spicy salmon is the perfect combination of sweet and spicy. The wontons bring the crunch, the salsa brings the sweetness, and the salmon brings the fresh and spicy. These can be served as a side dish, an appetizer, or dinner. It’s all just so good, it’s addicting.

Today was a beautiful day at the beach. We had a really nice beach day and now we are finished it off with these nachos and some cocktails. Since this is a tropical dish we are having margs. They pair so perfectly with this fresh dish. Unfortunately tomorrow is not supposed to be as nice, so we are enjoying this beautiful weather while we can. Hope you guys are having a great start to you’re weekend as well !!


Ingredients

  • 1 pound sushi grade salmon; diced

  • 1/4 cup kewpie mayonnaise

  • 2 tablespoons sriracha

  • 1 teaspoon soy sauce

  • 1 teaspoon sesame oil

  • 2 tablespoons scallions

  • 25 wonton wrapper; cut into triangles

  • 1 cup canola oil for frying

  • sesame seeds for serving

For the Mango Avocado Salsa

  • 2 mangos; diced

  • 2 avocados; diced

  • 2 jalapeños; seeded and diced

  • juice of 1 lime

  • 2 tablespoons orange juice

  • salt and pepper

Directions

  1. In a medium bowl, mix the salmon, kewpie mayonnaise, sriracha, soy sauce, sesame oil, and scallions.

  2. Cut the wonton wrappers into triangles. Heat the canola oil in a medium skillet until very hot. Fry one wrapper at a time until golden on one side. Flip over and fry for an additional 10 seconds.

  3. To make the salsa. In a medium bowl, add the mango, avocado, jalapeño, lime juice, and orange juice. Season with salt and pepper. Toss to combine.

  4. Assemble the nachos. Spoon the salmon mixture over the wonton chips. Top with salsa, sesame seeds, and additional scallions.
