Italian Fried Peppers & Sautéed Spinach
We love to pair our favorite bread from the Italian market with fried peppers and sautéed spinach! The bread is just too delicious dipped in the pepper oil or paired with simple sautéed spinach. Not to mention, this appetizer is super simple to make, and if you are having company the bread always fills everyone up!
We are already so excited to get back to the Italian market. We make the trip every few months, and in the summer usually every few weeks! We were only there three weeks ago, yet we already wanting to go back and restock on all of our favorites! The bread from one of our go-to stores, Claudio, being on of them!
Ingredients for the pepper:
4 cubanelle peppers
1/3 cup of extra virgin olive oil
Salt to taste
Ingredients for the Spinach:
10 oz of fresh baby spinach
1 shallot; sliced
1/8 - 1/4 tsp of red pepper flakes
1/4 cup of olive oil
Salt to taste
Directions:
Preparation for the peppers: place the peppers in a large frying pan over medium-high heat with the 1/3 cup of olive oil and sprinkle generously with salt; cover and fry the peppers until brown on all sides; transfer to serving dish and pair with fresh bread
Preparation for the spinach: in a large skillet, heat the olive oil and sauté the shallots until translucent; add the red pepper flakes; add the spinach turning it over with tongs until cooked; once spinach has cooked sprinkle it with salt to your liking
